INGREDIENTS

 

1 Cup quinoa
2 Avocado
1 Cup Peas
Juice of 1 lime
Handful of spinach
Handful Basil
1 TBSP Extra virgin olive oil
Sea Salt and Black Pepper
1 1/4 cups broccoli chopped into small florets
1 Handful fresh mint.

 

METHOD

 

Pour quinoa broccoli and peas into a saucepan and bring to the boil (NO LONGER THAN 15 MINS) I like to pour boiling water from the kettle into the saucepan rather than wait for cold water to boil – stops the veg from overcooking. Then drain the water out and remove the mix from the heat.
Meanwhile, blend mint, basil, 1 of the avocados and lime juice in a food processor.
Add the creamy sauce to the quinoa mix
Chop up the remaining avocado into chunks and stir in.
Add your torn up spinach, your coriander and the olive oil
Add salt and pepper to taste.
Serve!

 

NOTES

 

This is an extremely important dish… I love it so much that I have decided it will be my new signature dish (!!) – because it’s green (obviously!) simple and straight forward to make, full of incredible flavour, and makes your body feel utterly delicious, gorgeous and fresh instantaneously!!  <3
