INGREDIENTS

 

200g dark chocolate
2 TBSP Coconut Oil
1 cup peanut butter (or almond butter)
2 tbsp maple syrup
12 x almonds for decoration (optional)

 

METHOD

 

Melt dark chocolate and coconut oil together in a saucepan on medium heat until it becomes a liquid. Remove from heat.
In a separate bowl, mix together the nut butter and maple syrup.
In a cupcake baking tray, line with cupcake parchment papers. Blob a tablespoon of the chocolate into each cupcake tray.
Put the cupcake tray in the freezer for 10 minutes
Remove from freezer, put a dollop of the almond butter mix on each base. Try to push it down flat into the base.
Pour another tablespoon or two of the chocolate mix over each cup. Then, place an almond on the top of each cup.
Put the tray back into the freezer for 20-30 minutes.
Serve and enjoy!
