INGREDIENTS
6 Medjool dates pitted and soaked in boiling water for 1 hour
2 teaspoon baking soda
2 teaspoons cold pressed coconut oil
2 tablespoons ground almonds
1 large egg
1 1/2 tablespoons coconut flour
1 very ripe banana
1 teaspoon lucuma powder
Pinch Himalayan pink salt
1 teaspoon mixed spice
Sauce:
4 medjool dates soaked in boiling water for 1 hour
1/2 cup almond milk
2 tablespoon raw maple syrup
1 tablespoon lucuma powder
METHOD
Soak your dates in the hot water and 1 and a 1/2 teaspoons of baking soda and leave to soften for 1 hour
Drain the 6 dates for the pudding then place them with the egg and banana into your food processor or nutri bullet and blend. Once smooth add in the remaining 1/2 teaspoon baking soda, coconut oil, salt, ground almonds, coconut flour and spices and blend again in the food processor and process until smooth.
To make the sauce, drain the 4 dates for the sauce and chop into small pieces
Add pieces to a hot pan along with the syrup and milk and cook for about 5 min until softened then add in the lucuma powder. (if the mixture is too thick add a little more almond milk)
Cook for a further 5 min until bubbling and thickening it will resemble caramel, now pop in your food processor or nutribullet and blend until smooth.
Pour the sauce mixture evenly into the empty ramekins, this will create the sauce for on top of the puddings.
Pour the pudding mixture on top of this into your ramekins then put the full ramekins into a deep baking tray that is filled with boiling water, make sure the ramekins have water at least 1/2 way up the side of them 3/4 is best to keep the mixture moist (ahhh I hate using that word) but not that full it spills into your ramekins, take care doing this as you have a full tray of very hot water! now bake for 25-30 minutes at 190C or until cooked through. If they start to brown too much on top juts put a little square of foil over the top of them.
Use a spoon to go around the edge of your puddings and scoop the top now tip out onto a plate, you may have some pudding stuck in your ramekin just scoop this out and add to the top……VOILA!!!!
