INGREDIENTS
1 cup pecans
1 cup almonds
½ cup walnuts
2 cups oats
2 cups pumpkin seeds
1/2 cup Linseed or Flaxseed
2-3 tbsp Cinnamon
1 tbsp Vanilla essence
3 tbsp Coconut Oil
4 tbsp Honey
1 cup sultanas/raisins
METHOD
Pulse pecans, walnuts and almonds in a food processor (Pulse, don’t blend or they will become a flour – you still want to see chunks of pieces of nuts in there)
Transfer to a bowl, and add oats, pumpkin seeds and linseed or flaxseed. Stir well.
In a saucepan, melt the coconut oil, and then add the honey, vanilla essence and cinnamon to the pan. When it has all melted to form a liquid, remove from the heat and pour over your granola. Stir thoroughly.
On a baking tray, pour the granola mix and spread evenly. Cook in the oven at 200 degrees or Gas Mark 4 for around 30 minutes, and keep checking and stirring around so the top doesn’t burn.
Remove granola from the oven, and then (optional) add sultanas or dates to the mix*
Keep granola in an air tight container, and serve as and when you want it with a plant based milk of your choice. I also added strawberries and blueberries here!
NOTES
*Dried fruit if not ‘juice infused’ can contain added sugar, vegetable oil and sulphur dioxide. For the cleanest option stick to fresh fruit instead. Happy Breakfasting! Don’t forget to share your pics with me on Facebook and Instagram <3
How long will the granola stay fresh in the airtight container?
I love this! I am experimenting right now with eating a lot less sugar (mainly just taking out all the packaged crap and keeping everything natural) and I had given up on granola b/c even my homemade version I think had too much sugar but I like this recipe. I’ll have to try this. Thanks.
Looks yummy. Lizi’s Granola is the best I’ve found for sugar content. The Original has around 9g per 100g and the low sugar has just 4g per 100g
